As the only Indonesian coffee in our lineup, and the only to be wet-hulled, Bali Blue Moon is the most unique coffee we currently offer.
Although Indonesia is better known for Java and Sumatra, Bali has quietly been producing excellent beans for the last few decades.
The coffees produced in Bali, just as many of those produced in other parts of Indonesia, are processed using the wet-hulled method.
In the wet-hulled process (also called semi-washed and giling basah), the outer cherry is stripped from the bean as it would be in the normal washed process.
However rather than drying the bean to a moisture content of 11-12 percent as is typical in a fully washed process, the beans are only dried to 30-35 percent.
At this point, the partially dried coffee is stripped of the yellowy parchment that wraps the bean and is then dried to the appropriate 11-12 percent moisture content.
This two part drying process reveals flavors not found in many other coffees. Cedar and licorice are two flavors commonly associated with wet-hulled coffees.
There’s also a mellow sweetness on the finish that’s hard to describe.
The closest we’ve come to describing it is the tangy sweetness of tomatoes and bell peppers.
As weird as it sounds, we love it and think you will too.
