What happens when you combine the bassy notes of Brazil with the bright finish of Ethiopia?

That’s what we set out to discover with this newest addition to our blend lineup, Symphony Blend.

Many of our light medium roast blends and single origins have relatively “bright” finishes. Our two darker blends, Cornerstone and Pillar of Smoke, feature the darker roasted nutty flavors.

The goal with Symphony was to create a blend that has a full body without being too dark, and a sweet finish without as much brightness.

The result is a blend that has a nutty body (pistachio) that sweetens as it cools (dried pineapple).

Why dried pineapple? Juicy, fresh cut pineapple has an enzyme called bromelain. It’s what gives pineapple its familiar bite. When dried, however, the bromelain is no longer present and what’s left is a softer sweetness. This is what we taste in the subtle sweet finish of Symphony Blend.
